Playing out to a soundtrack of American rap music, his youthful, no-holds-barred cuisine charts a course between bold creativity, North African and Asian influences, and a healthy dose of affection for traditional cuisine – this is Lyon, after all! The original food-and-drink pairings are an integral part of the experience, encompassing beer, herbal teas and a natural wine list.
