Begin with the sopa azteca—a nourishing pasilla chile broth poured atop tortilla strips, avocado, grilled chicken and jack cheese. A version of the classic from Morelia, enchiladas a la plaza are first flash-fried, then folded over seasoned cabbage, potatoes and carrots.
