This Santa Fe south Indian restaurant promises exactly what its name promises: dosas, or crepes prepared with a fermented rice and lentil batter and a variety of fillings. It's the kind of place where you'll want to come with a group in order to share and sample more of their offerings. Madurai chicken curry has a nice boldness and desserts like passionfruit custard or gulab gamun are a nice way to end the meal, but there's one can't-miss item here — the namesake paper dosa. Thin and crispy and served with masala on the side, it's a real treat.
